What To Make for New Years? RJ's Cobbler Recipe

RJ's fruit cobbler recipe is a great option for what to make for new years

Hello, everyone! I'm on holiday this week up in the mountains on a ski vacation. However, there is not much snow up here on this trip and I have a lot of kids roaming around my small kitchen asking for sweet holiday treats. I don't have the time or the ingredients lying around to make a pie, so I decided to throw a few things together and came up with an easy fruit cobbler recipe that seems to do just the trick on keeping the natives from getting restless.

Whether your kids are like mine, you're strapped for ingredients/time or you're debating what to make for new years and in search of a fast, easy recipe to please everyone, this fast fruit cobbler is sure to deliver.


Fast Fruit Cobbler
Servings: 5

Ingredients:
1 cup sugar
1 cup all purpose flour
2/3 cup milk
1 stick butter
1 tsp salt

Fruit: 16 oz. fresh fruit/berries or 16 oz. frozen fruit (thawed) or 16 oz. canned fruit drained. Make sure your fruit or berries are dry before proceeding with recipe.

Instructions:
Preheat oven to 375. Melt stick of butter in 8 X 8 baking dish, ( I used a Pyrex Glass dish). Arrange fruit evenly on melted butter.  In a separate bowl, mix sugar, flour, milk and sugar.  Lumps are OK.  Pour mixture over berries.  Do not stir.  Sprinkle 1-2 Tbsp of sugar on top.  Cook for 45 minutes or until all four sides of your cobbler are golden brown. Don't  worry if the center of your cobbler appears runny. Allow cobbler to rest 10 - 15 minutes before serving.
