If you're struggling for creative ways to use holiday foods, from cheese platters and tortilla chips for your next family meal that your kids will enjoy, I have ideas for you. I'm going to show you chicken saltimbocca.
So basically I have butterflied and pounded out chicken breasts which we're just going to season with salt and pepper. And then I have some ham that I'm going to lay two slices on them. Then I have a little havarti cheese and then basically it's just going to be rolling it up. I've already scrambled an egg, I have flour, and then what I've done with the tortilla chips is ground them up in the food processor and added them to my breadcrumbs. This is going to add a little extra flavor and a nice crunch. First in the flour, and if you feel like you need to toothpick them, you can certainly do that, just don't forget to take them out before you eat them. Into our breadcrumb and back onto the baking dish. Do the same thing again. These are going to go into a 400 degree oven for 20-25 minutes until they are nice and crunchy. Those look beautiful!
