Everyone loves the smell of just-baked breads, treats and chocolate during the holiday season. But if you're like me, you may be strapped for time. Not to worry -- I have a homemade recipe for mini banana cranberry bread that's a perfect to bring to your next holiday party.
So banana cranberry bread - these are great for gifts. We're starting with 3 very ripe bananas and we're going to mash them. When you have bananas that have been sitting around, throw them into the freezer and when you're ready to make the bread, just pull them out of the freezer and they'll be perfect. So I mash the banana. To this I'm going to add a cup of flour, a half cup of sugar, a teaspoon of salt and a teaspoon of baking powder. Then I've got a quarter cup of chopped cranberries. Give that a quick mix.
Add my egg. I already have an oven preheating to about 350. I've already prepared two mini loaf pans and sprayed them with some non-stick spray. Then I have melted 4 tablespoons of butter. You can add nuts if you'd like, or raisins. Get that all mixed up well. Put it into these mini tins. Perfect. Level them out a little bit. And they are ready to go into the oven.
So our banana cranberry bread is ready, it's cooled down. See how easy it pops out of that pan? So I've purchased cute bags that are great to put the bread in and gives it such a nice presentation when you're going to give it as a gift. We have some festive ribbon as well. You can have the kids help you do this. Just knot it. See how pretty that is?
