Simple Pasta Salad Recipe: Just Add Vinaigrette & Spices

This isn't my first time in search of a simple pasta salad recipe. Back in May, I posted a recipe on my blog, AmandasCookin', called Grilled Chicken Salad with Herbed Tomato Vinaigrette. It was absolutely fabulous. Since I'm not normally one who likes to drown my salads in dressing, pasta salads and other recipes involving lots of it don't generally appeal to me. I like to add only a bit of flavor with my dressings, so I have plenty of leftover vinaigrette. It seemed like the perfect opportunity for me to use this leftover vinaigrette to make this wonderful pasta salad.
The weekend I tried this recipe for the first time, we were going up to our camper. I decided to take a box of pasta, the vinaigrette and some chopped ingredients, including tomatoes, radishes and green onion, for the trip. I also packed some broccoli florets, diced cheese, spices and, of course dressing. Once we got there, I cooked the pasta and mixed all of the ingredients together. I mean, I don't think you could make this recipe more simple, and it is just so delicious! You'll notice for the recipe below, I didn't include exact measurements; that's because I eyeballed most of the ingredients and added appropriate amounts based on what I know my family likes the most.
Tomato Herb Pasta Salad
Ingredients:
Chopped green onion
Diced radishes
Chopped broccoli florets
Diced cheese (some sort of soft white)
Vinaigrette (recipe here)
1/2 – 3/4 lb cooked and drained mini Farfelle pasta
Fresh ground pepper and salt to taste
Combine everything in a large bowl and mix well. Allow to chill in the refrigerator for several hours before serving, stirring twice while its chilling in order to distribute the flavors. Enjoy!
