The wonderful fresh taste of the sweet corn really shines through in this comfort‐food dish that is quite simple to make. If possible, use fresh corn from your garden or your local farmer's market, although frozen ears of corn will work nicely as well. Kids just love the smooth texture.
With a sharp knife, cut the kernels from the ear of corn. You should have about 2 cups. Using the dull side of the knife, scrape the milk and remaining pulp from the cobs and add it to the kernels.
In a food processor, place 1 cup of the kernels along with the milk, butter, cornstarch, sugar, salt, and pepper and process until smooth.
Place the mixture and the remaining corn kernels in a medium saucepan over medium heat and bring to a boil. Reduce the heat and simmer for 2 to 3 minutes or until the mixture thickens slightly. Serve immediately.
