English Muffin Pepperoni Pizzas

English muffins form the crust for these cute little pizzas, which kids love. If you use store‐bought marinara sauce and have a stash of your homemade on hand, you can have these little pizzas ready in just a few minutes.

Ingredients

  • 4 homemade gluten-free, split in half
  • 3/4 cup gluten‐free marinara sauce, such as Classico, or Homemade
  • 2 cups shredded mozzarella cheese or cheese alternative, such as Vegan Gourmet
  • 24 slices gluten‐free pepperoni sausage, such as Hormel

Preparation

Place a rack in the middle of the oven. Preheat the oven to 375°F. Place the English muffin halves, cut side up, on a 13 x 9‐inch nonstick (gray, not black) sheet. Spoon 3 tablespoons of the marinara sauce onto each half. Top each with 1/4 cup mozzarella cheese and 4 slices of pepperoni.

Bake 5 to 10 minutes or until the cheese is melted. Serve hot.
