Use this as a spread or a dip; its consistency is somewhere in between. Fresh goat cheese is just a little thicker than cottage cheese.

Preparation Instructions
Thin the goat cheese with enough of the cream, sour cream, yogurt, or milk to give it a spreadable consistency; the amount will depend on the thickness of the cheese and whether you want a thick spread or a thinner dip.
Stir in the garlic and herbs. Taste and add salt if necessary (some goat cheese is quite salty) and pepper to taste. Drizzle with the olive oil and serve, or refrigerate for up to several hours, then add olive oil and save.
