Cabbage and Carrot Salad Recipe

A nice, Asian‐style variation on the simple green salad.

Ingredients

pound of
Napa or Savoy cabbage, cored and shredded

Carrots, peeled and grated

Or 3 scallions, minced

1/4
can of
To 1/3 cup peanut (preferred) or ola oil

2
tablespoons of
Freshly squeezed lime juice

teaspoon of
Soy sauce

Salt and freshly ground black pepper to taste

Preparation Instructions

Combine the vegetables. Whisk together the oil, lime juice, and soy; taste and add salt and pepper if necessary. Toss the dressing with the vegetables and serve.
